Lasagna*

My lasagna is like comfort food on a very high level.

Obviously, it's not just something you can "whip up" in no time - you need to make a ragù and a dairy-free bechamel, but if you put on some music and get a friend over to help out, it can be such a magical thing to make.

And once you're done, you'll have batches for the freezer for many many rainy days!
