There are a thousand different cookies in this universe and this is my take on a glutenfree and dairy-free one.

Obviously you can make them with or without nuts, chocolate, etc - no matter what, I find that they tend to go down way to easily 🙂

INGREDIENTS

  • Plantbased 'butter' 230 g
  • Cane sugar 200 g
  • Brown sugar 150 g
  • Eggs: 2 whipped eggs
  • Vanilla 50 g
  • Baking powder 1 tsk
  • Hot water
  • Salt 1 tsk
  • Glutenfree flour 400 g
  • Chocolate and nuts as you like it

HOW TO

Take a bowl and mix the 230 g of plant-based butter, 200 g of cane sugar and 150 g of brown sugar.
Whip 2 eggs and 50 g of vanilla and stir it into the bowl.
Add 1 teaspoon of baking powder in some hot water and add 1 teaspoon salt and 400 g glutenfree flour.
Add chocolate and nuts to the mix as you like it.
Shape small balls from the dough and put them on and leave them with adequate distance on a sheet of baking paper.
In the oven they go, at 175 degrees C for 10 minutes.
