This is a classic and very beloved Danish thing.
Some people call it a dessert, but I know people who eat it for breakfast and lunch.
During summertime, I guess it's allowed eating it all day long.
But so many people buy it in the stores - for you guys; do try it home-made one day.
And this one is glutenfree and dairy-free, so for those of you who's in the same boat as me: Yay!

INGREDIENTS
- Glutenfree flour 300 g
- Baking soda 2 teaspoons
- Cane sugar 100 g
- Vanilla 100 g
- Salt 1 tsk
- Lemon zest from 2 lemons
- Marzipan 100 g
- Dairy free butter 100 g
- Eggs 2
- Limejuice 1 teaspoon
HOW TO
Put all ingredients in a bowl and mix them together.
Approx. 15 minutes on 150°C on hot air function.
You can buy “Koldskål” in a typical Danish supermarket, but for the non-dairy people, it’s so easy to whoop something up if you mix a plant based yoghurt with lemon- or limejuice and agave syrup.
