When making Osso Buco, the gremolata is to me, what the whipped cream is for the hot chocolate. No doubt you can drink a cup of hot chocolate without the whipped cream - but come on, let's be honest... The taste - the vibe - everything is just lifted with a bit of whipped cream on top.
Gremolata is magical.
