Why glutenfree & dairyfree?

Well… There are many ways to answer that…

On a personal level: Now that I’m not allowed to eat dairy products, I think a lot more about what’s actually in the things I eat… I can’t just eat whatever – I have to look at the table og contante on the back of the product and see what’s in it. And through that, I’ve become a big fan of this whole ‘clean food’ concept , where everything you eat has to ‘pass through your own hands’. Wow, what an educational ride that’s been. Also, I have to cook a lot more myself, and since I’ve always loved cooking, that really hasn’t been an issue. Of course there’s a bit of questioning, whenever I visit family/friends that want to cook for me, whenever I order take-out or go to restaurants, but it’s quick – and mostly painless… 😉 Another benefit from this journey is that I’ve, quite naturally, lost weight and my skin has improved a lot. Whether it’s zero dairy products or zero gluten, I feel very much ‘lighter’ in my everyday life… And should I eat some plain pasta or some bread (I’m not super intolerant to gluten – I’d just rather avoid it), then I really feel a difference in my body. But yes – I have to make an effort with my food, but I really consider that a gift.
